The team at Paddo are a passionate bunch. They are always up for a chat about the footy, our new menu or your favourite tipple. Make sure you say hi and also introduce your fur baby, they will ensure fido is looked after. 

HEAD CHEF: MARK HOLLAND

British-born Mark Holland has been a fantastic addition to the Paddo Inn team. Not only is he a Paddington local but he has also brought the now famous Paddo roasts to the pub and restaurant on Sundays. Mark loves using the abundant produce that living in a hot country like Australia provides and uses these as inspiration to create his seasonal menus. Mark previously worked at the award-winning gastro pub The Bull & Last in London and also did stints at Michelin Star restaurant The Box Tree as well as Nomad and The Tilbury in Sydney. Another fun fact about Mark? He made the top 4 on UK MasterChef: The Professionals in 2015!

GENERAL MANAGER: JAIME PEDRAZA

Jaime is the General Manager and Licensee of Paddo Inn. He joined the Paddo team after living in Melbourne for 8 years and originally hails from Bogota, Colombia! Next time you're at the Paddo make sure you say hola and in case you're wondering, he loves any drink with tequila. Jaime's passion is food, he started his hospitality journey as a chef and says Mexico and Colombia are his greatest inspirations through travel so far. You've probably worked out that we really like dogs at Paddo, Jaime's favourite is the Pointer, but really he loves them all.
